First cake I have ever made – Chocolate and banana brownies
Ingredients:
5 tbs reduced fat cocoa powder
1 tbs caster sugar
75 ml skimmed milk
3 bananas, mashed thoroughly
1 cup (220g) soft light brown sugar
1 tsp vanilla essence
5 egg whites
3/4 cup (75g) self-raising flour
3/4 cup (75g) oat bran
1 tbs icing sugar, for dusting
Instructions:
1. Preheat oven to 180C. Line a 23cm square cake tin with non-stick baking paper.
2. Blend the cocoa, caster sugar and milk. Add the bananas, brown sugar and vanilla essence until they are well combined.
3. In a bowl lightly beat the egg whites. Add the banana mixture to the egg whites and beat well. Sift the flour over the mixture. Fold in with the oat bran. Pour into the prepared tin.
4. Bake for 40 minutes or until firm. Set aside to cool in the tin for 10 minutes before transferring to a wire rack to cool. Cut into pieces and dust with icing sugar to serve.
